Hello Reader Happy Friday! If you're in the UK, you might have enjoyed couple of glorious sun shining days earlier this week with some warm (as for the time of year) temperatures. It was such a welcome change after weeks of gloom and constant rain. It didn't last long but there is a definite shift in the air so hopefully spring is just around the corner now. 🤞 But where am I going with this weather related small talk? Well, even though we have finally seen the sun, general vibe is still pretty cosy and comforting when it comes to food and so is my latest recipe - Creamy Cauliflower Leek and Potato Soup. It is a delicious alternative to your bog-standard leek and potato soup. It's quick and easy to make and so good after a nice walk on a cold day (sun or no sun, remember to keep moving 😉). Hello Friends! I hope you're well! Easter Sunday is exactly a week away and so it must be time for a spot of Easter baking. I've got plenty of simple recipes to satisfy your sweet tooth and as you'll notice mini eggs are making frequent appearance as well. Unfortunately, vegan mini eggs I recommend in my recipes are no longer available (such a shame) but you can swap them for any chocolates/sweets you like. Hello Reader Would you believe it's already Friday again! It seems like time has been using some sort of fast forward button recently.
