Hope you had a good week!

After last week's sweet treat in the form of very unseasonal Polish Pierniczki πŸ˜‰ this week is all about bold, savoury, umami flavour in the shape of meat-free sausage rolls.

I know, I know, if there is no meat in them they shouldn't be called sausage rolls. Well, I'm sticking with sausage rolls as to me it's just semantics and I highly doubt anybody will be confused as to the content of said sausage rolls after reading/hearing Tofu & Mushroom Sausage Rolls. Definitely not my lovely readers and subscribers (thank you for being here)! πŸ₯°

It's not the first sausage rolls recipe on the blog but I really like this one as it's packed to the brim with one particular ingredient my family is not keen on (to say the least) - mushrooms. They are absolutely packed with mushrooms and yet these sausage rolls have been officially crowned as the best yet! Ok, I'll take that.

So there are mushrooms, there is smoked tofu, there is miso - can you see why they're full of umami yet? There is also one more ingredient which is becoming more and more popular here especially if you are into your beans and pulses! If you don't have it, super easy and as delicious substitutes are provided but I'm curious to find out if any of you cooked with this ingredient before? Let me know.

PS. No review of the week today but I thought I would re-share super easy recipe for my No-Bake Chocolate Oatmeal Cookies. They pretty much make themselves and are super moreish and perfect to satisfy that sweet tooth without being over indulgent.
